Bun & Co. Replacing Kampuchea – Opening This Week

I just got word a few days ago that Kampuchea is closing. And owner Ratha Chaupoly tells Grub Street that he will be opening a new joint in the same space as soon as this Saturday. New York moves too fast for it's own good. No mourning time for Kampuchea??

The new space is going to be called Bun & Co., a "sandwich bar & grill" inspired by Ratha's 5-year-old son, Tristan. He says, "every time my son and I have lunch or a light snack, we're always using hot dog buns. We put pretty much everything in there – meatballs, hot dogs, shrimp rolls…", therefore the guys over at Parisi Bakery will be making special buns with a touch of honey and sugar and specially made for stuffing. What kinds of stuffing? Expect some normal (shrimp, meatballs, pulled pork) and some abnormal (fried scrod, liver, tongue). There will be a choice of house-made toppings for you as well, ranging from sauerkraut, cole slaw, rum bacon and chives (YUM), and assorted seasonal relishes.

The buns will range from $4 to $7.25, and the front room opens this week from 12 noon til midnight, and til 2 am Thursday through Saturday. The back room will be serving alcohol within the next few weeks as well.
