Crunchy Chocolatey Cereal-Nut Mix

Ok, so I haven't come up with a brilliant name for it yet, but that's basically what it is. I was bored/wired last night and I decided I wanted a little shnack. Yes, a shnack. Maybe something a little salty and also a little sweet. I looked around in my cabinets and discovered I had a slew of chopped nuts, dried cranberries, bakers chocolate, and cereal. Keep in mind this was also around 9 pm last night and I didn't feel like doing anything that required a lot of effort. I originally wanted to make cookies, but I didn't want to break out the mixer, the bowls and various utensils and make a mess. Fortunately my laziness paid off, because this turned out pretty damn good and it was super easy. Also, feel free to substitute the cereals I used for any cereal you like. I imagine this would be especially yummy with Honey Nut Cheerios, but I didn't have that…wah…

Ingredients

 

1 cup Crispix cereal 
1/2 cup Cheerios cereal
1/2 cup pecans, chopped
1/3 cup walnuts, chopped
1/4 cup dried cranberries, chopped
1/2 tsp cinnamon
1/4 tsp sugar
2 Bakers Semi-Sweet Chocolate Baking Squares

 

Put chopped nuts and cereal in a single layer on a baking sheet and sprinkle with the cinnamon and sugar. Bake at 325 degrees for 10-15 minutes until toasty and fragrant. You will smell the cinnamon.

Remove from oven and let cool. Mix dried cranberries in with the mixture and transfer to another cookie sheet lined with wax paper.

Melt the bakers chocolate in the microwave or in a double boiler. Be careful to not burn the chocolate – nobody will like that.

Drizzle the chocolate all over the cereal-nut mixture and pop in the fridge for 15-20 minutes to harden and cool.

Break into pieces and there you have it: crunchy-nut cereal chocolate mix. Wait that's not right. Well, whatever you want to call it…
