Royal Wedding Shortbread Corgi Cookies!

This post is dedicated to Rudy, one of my best friends, the Royal Wedding, and Corgi Fridays. If you don't know about the Royal Wedding, you live on another planet and are probably not reading this. And if you don't know about Corgi Fridays (more likely), you can read about it here. I don't know how or why Corgi Fridays was started, but all I know is that every Friday I get an email or a link directing me to Warmingglow.com to check out the latest selections for Corgi Fridays. We take it pretty seriously – Rudy was in Jamaica on vacation last week and still managed to get me my Corgi Friday fix. Bravo Rudy, bravo. 

In continuum of Corgi Fridays, he also bought me a Corgi cookie cutter for my birthday. Isn't it nice when someone gives you a gift for your birthday that is secretly disguised as a gift for themselves? Still, I wanted to bake some Corgi Cookies, but I was faced with a dilemma: Rudy doesn't like sugar cookies. F. Of course, the easiest cookie-cutter-cookie out there. I thought pretty hard about this, and then it hit me: Corgi Cookies + Corgi Fridays + the Royal Wedding (on a Friday no less!) + the Queen loves Welch Corgis = ROYAL WEDDING SHORTBREAD CORGI COOKIES!! Did you know that if you dunk shortbread cookies half in chocolate they become "Royal Shortbread Cookies"?! It does NOT get much more perfect than that. So not only did I bake these puppies (pun intended), I put f-ing chocolate boots and bowties on them. THAT'S RIGHT. I dipped their tiny paws in chocolate and there you have it: Royal Wedding Shortbread Corgi Cookies. How many times can you make something like that and have it be delicious and topical at the same time?! This was a once in a lifetime opportunity friends, and I ran with it.

Well…maybe more like jogged. I faced another dilemma with these cookies: how ridiculously delicate they are. I'm more of a cook than a baker, so maybe I am missing that slight of hand needed to scrape a corgi-shaped cookie off of a baking sheet and over to a bowl of melted chocolate..either way…there was a bit of a slaughter. Paws snapped off, tails broke, decapitations; it was quite the massacre. See below. Warning: images may contain disturbing content

So sad. Here's the upside though, now that I know the few tricks of how to make this LESS of a pain in the ass, I can make them again and not face as many compound fractures. 

My first mistake: not freezing the dough for about 10-15 mins after I was done mixing it. This "dough" is basically butter and flour. It's sticky, it's soft, and it will NOT roll out unless it is chilled – and chilling it in the fridge is not enough. Believe me. And you have to roll it between two sheets of waxed paper or else it will stick to your rolling pin, even a nonstick one.

Second mistake: making the cookies too thin. I made a second batch at a 1/4-inch to 1/2-inch thickness and they were delicious and way less breakable. All of them were delicious actually, they literally melt in your mouth, but the thicker ones somehow tasted better and held up to things like spatulas and the weight of melted chocolate.

I also came up with a trick that worked REALLY well: I rolled out the cookie dough (between the wax paper as you'll see below, after chilling) and cut the shapes with the cookie cutter, then froze it AGAIN for a few minutes before baking. They were so hard to peel off when they were room temp that this made it so easy – the excess dough just snaps off, not to mention they will hold their shape much better during baking.

On a completely separate note…this post may have been dedicated to Rudy, but he will not be receiving a single cookie. Why? Because he doubted my ability to make them. Let this be a lesson to all of you – do not doubt me! I share these cookies with my REAL friends now…and Rudy gets nothing but a heaping tablespoon of ENVY.

Royal Wedding Shortbread Corgi Cookies

Ingredients
1 and 1/2 cups all purpose flour
1/2 cup cornstarch
1 cup (2 sticks) unsalted butter, softened
1/2 cup powdered or confectioners sugar
1/4 tsp salt
1 teaspoon pure vanilla extract
6 oz melted semisweet chocolate (I used Dagoba 62%)
 
Directions
Cream butter for about 1 minute with an electric or hand mixer, add the sugar and beat until smooth and creamy (about another minute). Should look like a buttercream. Beat in the vanilla extract.

Start adding in the flour and beat until combined but don't overmix. Form dough into a thick disk shape, wrap in plastic wrap and freeze for about 10 minutes. This will make it way easier to handle.
 
Place chilled dough on a piece of waxed paper and cover with another piece of wax paper. Roll out until its a 1/4-inch to 1/2-inch thickness.

Take your corgi shaped cookie cutter, dip it in flour and start making corgis in your dough. DO NOT try to peel them off at this point. It will be near-impossible. Put them back in the freezer as is for about 5-8 minutes.

Remove from freezer and snap off the excess. Transfer corgi cookies to a baking sheet and bake at 350 for 12-15 minutes or until the edges start to very lightly brown. Cool on a wire rack. Repeat this process with any excess dough left over from scraps.

For the melted chocolate, I was feeling lazy so I microwaved it for 45 seconds, then I took the cooled cookies and started dunking. I did half with bowties and boots and the other half with just boots. There's really no rules for this part..you don't even have to use chocolate if you don't want to, but I think it's a nice touch (and tastes extra decadent). My word…would anyone like a spot of tea??

  2. Umm!! What a tasty “Corgi Cookies”, the design of this “Corgi Cookies” is quite different, first I taught that making such kind of designs is too hard, but after reading this article I was shocked that is such a simple process.
    Even I tried to prepare these cookies at my home; of course not that doggy shaped one, but a normal shaped cookie. Thanks for the one who wrote this article and helped me, how to prepare these cookies…
