Easter Egg Fruit Cookie Tart

I saw a few of these on Pinterest recently and they were all called “Fruit Pizza”, but I really don’t feel like sullying the good name of pizza with fruit. So I’m drawing the line right here.

I think this is a super cute, easy, and fun treat you can make with your kids for Easter! Kids are optional for this recipe though, as I do not have any and it worked out just fine.

You can use whatever fruits you like, just make it colorful and somewhat symmetrical and you’re good to go. I didn’t measure how many I used, so just use however much or little as you want! I also found these pastel colored marshmallows in a random bodega near me, so I used some of those, but don’t stress if you can’t find them!

And on the dough, if you’re ambitious enough to make your own sugar cookie dough, by all means do it. I am not a baker so I used the store-bought kind and it worked out perfectly. Just make sure you have a rolling pin on hand and form into an egg-shape (which is also super easy to do).

For the frosting, it’s a combination of cream cheese, butter, vanilla, and powdered (confectioner’s) sugar. So it will taste WONDERFUL, kind of like a cheesecake or the frosting on a cupcake. Who doesn’t love a good cream cheese frosting?!

Easter Egg Fruit Cookie Tart

  • 1 package store-bought sugar cookie dough
  • Strawberries
  • Raspberries
  • Blueberries
  • Kiwi
  • Mango
  • Literally whatever fruit you want
  • Miniature marshmallows (optional)

For the frosting:

  • 1 package (8 oz) cream cheese, softened
  • 4 tbsp (half stick) of unsalted butter
  • 1 cup confectioner’s sugar
  • 1/2 tsp vanilla extract

Directions

  1. Preheat oven to 325 (follow package instructions for temperature)
  2. In a stand mixer (or large bowl with a hand mixer), add the cream cheese and butter. Cream together and slowly add in the confectioner’s sugar. When all blended together, add the vanilla extract and combine once more. Set aside. Don’t put in the fridge or else it will get hard!
  3. Roll out the cookie dough into an Easter egg shape. Bake according to the directions on the package until the edges are lightly golden brown. This took about 14-15 mins in my oven. Remove and let cool completely. If it’s at all warm your frosting will melt on contact!
  4. While that’s cooling, slice up the fruit that requires slicing (strawberries, kiwi, mango, etc).
  5. Once the cookie is cooled, add the frosting on top and then decorate with the fruit and marshmallows. So fun and delicious!
