Easter Popcorn

I could easily call this “Unicorn Popcorn” to try and get more traffic to it…but I really hate things that are referred to as “unicorn”. I don’t know where or when that became the new food craze but it really grinds my gears that it did…

So let’s call it “Easter Popcorn” instead!! Whatever you want to call it, just make it look pretty and pastel-colored and you’re good to go.

The thing that’s great about this one, is you can use store-bought, already popped popcorn (just make sure it’s unsalted or lightly salted, with no additional flavoring), and be done within 5 minutes. And then you can get creative with the food coloring combos, but I happened to find “Neon” food coloring, which turned out to be pastel. It worked out perfectly! That said, if you can’t find this Neon version, you can mix the regular ones to make similar colors (and the directions for that are usually on the back of the box).

Feel free to use whatever Easter candies you have on hand for this, I just happened to have some fun colorful sprinkles which adhered to the chocolate nicely. Some people add Cadbury Mini Eggs or pastel M&Ms (which I actually regret not adding now because M&Ms and popcorn are a great combo).

Here’s to tasty, colorful popcorn!

Ingredients

  • 8 cups popped popcorn (unsalted or lightly salted)
  • 1 cup white chocolate chips, divided
  • Neon food coloring (pink, blue, purple, green)
  • Colorful sprinkles
  • Pastel M&Ms, Cadbury Mini Eggs (optional)

Directions

  1. Divide the popcorn into two large mixing bowls. Set aside and make the chocolate drizzle.
  2. Divide the white chocolate chips into thirds, with each batch in a separate microwavable bowl. You can divide in half if you only plan on using two colors. I used three (pink, blue, purple). Microwave the first batch of white chocolate chips in 15-20 second increments until melted. Stir to remove any lumps, add 2-3 drops of pink food coloring and mix together. Set aside. Repeat this process with the other chocolate bowls and the purple, blue, or green food coloring.
  3. Once you have your assembly line of colorful chocolate drizzles, add a little bit of pink chocolate drizzle to both bowls and stir, gently, so you don’t smash up all the popcorn. It’s sticky, so you won’t be able to fully coat it, but you want the pink color to be the base.
  4. Add a little bit of the purple color to one of the bowls and stir. Then add a little bit of the blue to the other bowl and stir. Repeat that process until you’ve reached your desired color/coating.
  5. In a large bowl, combine both popcorn mixtures into one and add sprinkles (and other candies if you have them). Mix gently, then drizzle with any excess colorful chocolate. Set aside for 15 mins until the chocolate hardens and enjoy!! You can also put them in mason jars or decorative gift bags to give out as Easter gifts.
