Hill Country is Opening Fried Chicken Joint

Thank GOD. I think one of the few things NYC is really lacking in terms of comfort food is a true fried chicken restaurant. There's only so much KFC and Popeye's a person can eat before fatal indigestion sets in.

Hill Country will be opening a rather large fried chicken joint (2,700 sq. ft) on 25th and Broadway, set to open in the Spring.  But this ain't no spring chicken! There will be two versions of fried chicken served: owner Marc Glosserman's family recipe, and Executive Chef Elizabeth Karmel's recipe – who will be cooking both. I didn't think it was possible to have a fried chicken face-off between yourself and…yourself…but hey, why not? The restaurant will also be serving homemade pies, biscuits, and ice cream. And if you look out the window, you'll see the Cleavers jumping rope and riding bikes. It just sounds very Texas circa 1955, but I am definitely excited for the opening in the Spring (circa 2010). My oh my, how far we've come. And we're still serving the same food. Well you know how I see it? Fried chicken is like a 1954 Corvette: drool-worthy to look at, and will always be a classic.

  2. You know, I will have to get back to you on that! I haven’t made fried chicken in a while..but I remember the last time I did I used buttermilk to coat, then dredged in flour, then buttermilk again, then flour again (aka double breading). I believe I also seasoned the flour with salt, pepper, cayenne, and paprika. Hit the deep fryer and there you go! There are tons of variations on this though – you can use crushed Saltine crackers for breading, corn flakes…but for traditional, I’d say stick with flour! Might be time to test a recipe…
